Beef Tournedos

2  4 oz  beef medallions

2 cups of button mushrooms

1 tsp. of tarragon

½ cup chopped onions

1 tsp. of flour

1 tbs. butter

1 cup red wine

Sautee onion in butter until clear. Add red wine and tarragon. Sautee for 3-4 minutes. Add mushrooms. Stir in flour.  Pan sear or grill beef fillets to desired temperature. Serve with green beans (see recipe) and garlic mashed potatoes.

Raffi's Green Beans

Sautee fresh green beans with garlic, pimento and white wine in butter until tender.
