Stuffed Chicken Bonne Femme from Scott Schymik

For the stuffing: stuffing for 4-6

1/4 cup butter, melted

7 slices of bread, blended into crumbs
1/2 onion, diced

1 cup shittake mushrooms, sliced

Salt and pepper

In a sauté pan add butter and onions.  Cook for 3-5 minutes on medium heat.  Add in mushrooms and stir.  Cook for 3 more minutes.  Add salt and pepper to taste.  Pour mixture over breadcrumbs in a bowl.  Mix.  Refrigerate until ready to stuff chickens.

For the sauce: sauce for 4-6

1TBSP butter

1/4 cup diced onion

1/2 cup button mushrooms, diced

2 cups heavy whipping cream

Salt and pepper

1/2 tsp dried thyme

In a small stock pot add butter and onions on medium heat.  Cook for 3 minutes.  Add mushrooms and cook for 3 minutes.  Add the cream and stir for 2 minutes.  Add the salt/pepper and thyme.  Turn heat to low and reduce to desired thickness.
